How to serve your Chicken Pie
For me, I like my chicken pie simple, pie and peas, and if i'm feeling like sprucing it up, roast some lovely vine tomatoes to go with it, the sweet acidity of them is perfect with the creamy chicken pie.
To keep it really simple, we have two awesome sides that go with our pie - our peas, leeks & lardons, or some of our best selling Hasslebacks! If you don't have any of those, try the below…
Roast Vine Tomatoes (Serves 2)
This is a super simple and quick side that I make all the time. Given there are only 3 ingredients, it’s totally worth buying the best ingredients you can for this, particularly the tomatoes.
300g (ish) cherry tomatoes, preferably on the vine
A couple of glugs olive oil (50ml)
A good pinch of sea salt (Maldon is my preference)
Method
Preheat your oven to 180
Drizzle the olive oil over the tomatoes, roll around gently in a bowl if needed to ensure they are well coated.
Sprinkle over the salt, crushing it between your fingers as you do.
Place on baking parchment on a baking tray near the top of the oven.
Roast for 25 - 30 minutes, until they have taken on some colour and started to shrivel.
Rest for 2 mins
Make sure you spoon over any juice left in the roasting tray - it's delicious.
Must have additions: Mustard & Ketchup….and any other condiment that takes your fancy, it is a pie after all!
