Lemon & Blueberry Layer Cake Recipe 🍰
When life gives you lemons... bake a cake with them. 🍋
(And eat it after your FieldGoods main course, obviously!)
In honour of World Baking Day we thought it was only fitting to share a favourite of ours - this perfectly balanced sweet & tangy beauty.
We love how the vanilla cream cheese icing matches that balance in the cake itself. Sweet, but not too much. We're salivating now.

Get ready, set, BAKE!
Cake Ingredients 🍰
230g salted softened butter
250g caster sugar
100g light brown sugar
4 large eggs
1 tablespoon vanilla extract
350g sifted plain flour
1 tablespoon baking powder
240ml buttermilk OR whole milk
2 tablespoons lemon zest
120ml lemon juice (3-ish lemons)
250g fresh blueberries (275g frozen)
1 tablespoon plain flour
Extra blueberries (for decoration)
Cake Method Pt. 1️⃣
1/ Pre-heat the oven to 180°C & line 3x 8-9" cake tins with butter & baking parchment
2/ Beat the eggs & vanilla in a jug
3/ Beat the butter & sugars together in a separate, large bowl
4/ Very gradually beat the eggs into the sugar & butter mix
5/ Sift the flour & baking powder
Cake Method Pt. 2️⃣
6/ Gradually & gently fold the flour mix into the butter, sugar & egg mix
7/ At the same time gradually add the milk, lemon juice & zest to keep the consistency constant
8/ Gently roll the blueberries in the tablespoon of flour, add to the mix & split it between the 3 cake tins
9/ Bake at 180°C for 20-25 mins until golden & spongey to the touch
The icing 😋
Ingredients
250g full-fat cream cheese (room temperature to match the butter)
125g salted butter (needs to be very soft, but not melted)
250g sifted icing sugar
1 teaspoon vanilla extract
Method
Mix butter & icing sugar together first, until smooth. Then beat in the cream cheese & vanilla. Double the recipe if you love icing 🐒
Assemble! ✌️
Obviously the best bit. Make sure all 3 cakes are completely cool. Choose a plate on which to display it.
Then layer each of the 3 cakes with plenty of icing inbetween. Leave a little gap when spreading so it oozes out a little, but not too much.
Finish with the extra blueberries on top, and refrigerate for at least an hour before serving.
