Ell's Raita Recipe 👨🍳

Can you tell we're confident with this one?
Below is Ell's spin on a classic Raita recipe. It takes 5-10 mins to whip up while up while your Naan is warming & your Cauliflower Butter Masala is bubbling.
Ingredients 👨🍳
4 tablespoons of Full Fat Greek Yoghurt (no skimping, it's not worth it) 🥄
Roughly half a Cucumber 🥒
1 clove of Garlic 🧛♀️
Half of a fresh Lemon (zest & juice) 🍋
A sprinkle of Maldon Sea Salt (we all know it's the best) 🧂
A good glug of Extra Virgin Olive Oil (my personal fav is Il Casolare and you can nab it from Tesco) 🍸
Step-by-step ✌️
1️⃣ Dollop your Greek Yoghurt into a bowl
2️⃣ Shave & slice your Cucumber into cubes
3️⃣ Grate your Garlic & zest your Lemon
4️⃣ Add all of the above to the Yoghurt in the original bowl, along with: a healthy squeeze from your Lemon; a generous sprinkle of Salt & that glug of Olive Oil
5️⃣ Give the whole lot a good mix & adjust your seasoning to taste
6️⃣ Serve atop your Cauli Masala, nestle with Naan bread & savour!
